The Time and Temperature Rule

The clock is cumulative across the whole trip: time in a warm car counts, time in a pack counts, and time on a picnic blanket counts.
What Travels Without Chilling

- Hard cheeses, in the short term and in cool conditions
- Cured meats designed to be shelf stable
- Unopened tins and pouches
- Bread, nuts, dried fruit, oats, pasta and rice
- Eggs, in some regions, and it depends on local practice

Cook Meat Thoroughly
Poultry to seventy-four degrees Celsius, mince to seventy-one, whole cuts to sixty-three with a rest.
Charred outside does not mean cooked inside, and that is a particular problem over a fire where heat is uneven. A small probe thermometer weighs almost nothing.
Raw meat needs its own container and its own board and utensils, and nothing that touched it should touch cooked food.
Cool Boxes Have Limits
For car camping. A cool box with ice packs keeps food cold for a defined period, not indefinitely.
Pack it full and cold, keep it in shade rather than a hot boot, and open it as little as possible. Drinks in a separate box, since that one is opened constantly.
Once the ice is gone, the contents are at ambient temperature and the clock has been running.
Hand Washing
The largest single control, and there is no sink.
Water, soap and a way to catch the runoff, or hand gel as a backup. Most camp stomach illness is transmitted person to person rather than from food or water.
Do Not Keep Leftovers
Cook what will be eaten. Perishable food that has sat out should be discarded rather than saved for tomorrow.
Rice Has Its Own Rule
Cooked rice left at ambient temperature can develop toxins that reheating does not destroy. Cook and eat it.

Perishables first, dried later in the trip.
